Steps
-
Step 1:
Heat the butter in a large skillet, preferably cast iron, over medium heat.
-
Step 2:
Add the chopped onion and cook for a few minutes, until translucent.
-
Step 3:
Mix in the chopped corned beef and potatoes.
-
Step 4:
Spread the mixture evenly over the pan.
-
Step 5:
Increase the heat to high or medium-high and press down on the mixture with a metal spatula.
-
Step 6:
Do not stir; let the potatoes and corned beef brown. Sizzling is a good sign.
-
Step 7:
Use a metal spatula to peek underneath and check whether the hash is browning.
-
Step 8:
When nicely browned, use the spatula to flip sections in the pan so they brown on the other side, then press down again.
-
Step 9:
If there is too much sticking, add a little more butter to the pan.
-
Step 10:
Continue cooking this way until the potatoes and corned beef are nicely browned.
-
Step 11:
Remove the skillet from the heat and stir in the chopped parsley.
-
Step 12:
Season with plenty of freshly ground black pepper and salt to taste.
