Steps
-
Step 1:
Heat the flat grill plate over low heat, using 2 rings or flames if it fits, and brush sparingly with light olive oil.
-
Step 2:
Cook the sausages first by placing them on the hot grill plate, or on the coolest area if there is one.
-
Step 3:
Cook the sausages slowly for about 15–20 minutes, turning occasionally, until golden.
15–20 min -
Step 4:
After the first 10 minutes, increase the heat to medium before beginning to cook the other ingredients.
10 min -
Step 5:
If space is limited, cook the sausages completely and keep them hot on a plate in the oven.
-
Step 6:
Snip a few small cuts into the fatty edge of the bacon.
-
Step 7:
Place the bacon directly on the grill plate and fry for 2–4 minutes on each side, or until it reaches your preferred crispness.
2–4 min -
Step 8:
Keep the cooked bacon hot on a plate in the oven if needed.
-
Step 9:
Brush any dirt from the mushrooms with a pastry brush and trim each stalk level with the mushroom top.
-
Step 10:
Season the mushrooms with salt and pepper, drizzle with a little olive oil, and place them stalk-side up on the grill plate.
-
Step 11:
Cook the mushrooms for 1–2 minutes, then turn and cook for a further 3–4 minutes. Avoid moving them too much, as this releases their natural juices and makes them soggy.
1–2 min -
Step 12:
Cut the tomatoes across the center, or in half lengthways if using plum tomatoes, and remove the green eye with a small sharp knife.
-
Step 13:
Season the tomatoes with salt and pepper, drizzle with a little olive oil, and place them cut-side down on the grill plate.
-
Step 14:
Cook the tomatoes without moving them for 2 minutes, then gently turn them over and season again.
2 min -
Step 15:
Cook the tomatoes for a further 2–3 minutes, until tender but still holding their shape.
2–3 min -
Step 16:
Cut the black pudding into 3–4 slices and remove the skin. Place on the grill plate and cook for 1½–2 minutes on each side, until slightly crispy.
2 min -
Step 17:
For fried bread, heat a separate frying pan over medium heat and cover the base with oil. Add the bread and cook for 2–3 minutes on each side until crispy and golden; add more oil if the pan becomes too dry. For a richer flavor, add a knob of butter after turning the slice.
2–3 min -
Step 18:
For fried eggs, break the eggs directly into the pan with the fried bread and leave for 30 seconds. Add a good knob of butter and lightly baste the eggs with the melted butter. Cook to your preferred stage, season, and gently remove with a fish slice.
-
Step 19:
Once all the ingredients are cooked, serve on warm plates and enjoy immediately with a good squeeze of tomato ketchup or brown sauce.
