Grease an 8-inch (20 cm) square baking pan.
-

6–8 min -
Step 5:
Remove from the heat, stir in the vanilla, and let cool. Set aside.
-
Step 6:
Combine the rolled oats, flour, sugar, baking soda, and salt in a food processor.
-
Step 7:
Pulse 3 times, taking care not to overmix; the mixture should be just combined rather than powdery.
-
Step 8:
Add the butter and pulse again until the mixture is crumbly in pea-sized clumps.
-
Step 9:
Transfer to a mixing bowl and thoroughly mix in the butter.
-
Step 10:
Spread half of the oat mixture over the bottom of the prepared baking pan, pressing it down to make a flat, even bottom layer.
-
Step 11:
Add the date mixture over the crust and spread evenly.
-
Step 12:
Layer with the remaining oat mixture and press down to flatten the top layer.
-
Step 13:
Bake in the centre of the oven until the top is golden brown, 30 to 35 minutes.
30–35 min -
Step 14:
Let cool completely in the pan before cutting and serving.
-
Step 15:
Store covered date squares in the refrigerator for up to a week, or freeze for 2 to 3 months.
