Steps
-
Step 1:
Heat the flat grill plate over low heat, using 2 rings or flames if it fits, and brush it sparingly with light olive oil.
-
Step 2:
Add the sausages to the hot grill plate, using the coolest part if there is one.
-
Step 3:
Cook the sausages slowly for about 15–20 minutes, turning occasionally, until golden.
15–20 min -
Step 4:
After the first 10 minutes, increase the heat to medium before cooking the other ingredients.
10 min -
Step 5:
If space is limited, cook the sausages completely and keep them hot on a plate in the oven.
-
Step 6:
Snip a few small cuts into the fatty edge of the bacon.
-
Step 7:
Place the bacon directly on the grill plate and fry for 2–4 minutes on each side, or until it reaches your preferred crispness.
2–4 min -
Step 8:
Keep the cooked bacon hot on a plate in the oven if needed.
-
Step 9:
Brush away any dirt from the mushrooms with a pastry brush and trim the stalks level with the mushroom tops.
-
Step 10:
Season the mushrooms with salt and pepper and drizzle with a little olive oil.
-
Step 11:
Place the mushrooms stalk-side up on the grill plate and cook for 1–2 minutes.
1–2 min -
Step 12:
Turn the mushrooms and cook for a further 3–4 minutes, avoiding excessive movement so they do not release juices and become soggy.
3–4 min -
Step 13:
Cut the tomatoes across the centre, or halve them lengthways if using plum tomatoes, and remove the green eye with a small sharp knife.
-
Step 14:
Season the tomatoes with salt and pepper and drizzle with a little olive oil.
-
Step 15:
Place the tomatoes cut-side down on the grill plate and cook without moving for 2 minutes.
2 min -
Step 16:
Gently turn the tomatoes over and season again.
-
Step 17:
Cook for a further 2–3 minutes, until tender but still holding their shape.
2–3 min -
Step 18:
Cut the black pudding into 3–4 slices and remove the skin.
-
Step 19:
Place the black pudding on the grill plate and cook for 1½–2 minutes on each side, until slightly crispy.
2 min -
Step 20:
For fried bread, heat a separate frying pan over medium heat and cover the base with oil.
-
Step 21:
Add the bread and cook for 2–3 minutes on each side until crispy and golden.
2–3 min -
Step 22:
If the pan becomes too dry, add a little more oil.
-
Step 23:
For a richer flavour, add a knob of butter after turning the bread slice.
-
Step 24:
For the fried eggs, crack the eggs directly into the pan with the fried bread and leave for 30 seconds.
-
Step 25:
Add a good knob of butter and lightly splash or baste the eggs with the melted butter.
-
Step 26:
Cook the eggs to your preferred stage, season, and gently remove them with a fish slice.
-
Step 27:
Once all the ingredients are cooked, serve on warm plates and enjoy immediately with a good squeeze of tomato ketchup or brown sauce.
