Steps
-
Step 1:
To make the jerk marinade, combine all the ingredients in a food processor with 1 tsp salt.
-
Step 2:
Blend to a purée. If it will not blend, turn off the processor, stir the mixture, and try again; do not add water, as you want a thick paste.
-
Step 3:
Taste the jerk mixture for seasoning. Add more chillies if it is not spicy enough, or add a little more brown sugar if it is too salty and sour.
-
Step 4:
Make a few slashes in the chicken thighs, then pour over the marinade and rub it into all the crevices. Cover and marinate overnight in the fridge.
-
Step 5:
For barbecue cooking, get the coals burning about 1 hour before you are ready to cook.

Step 6:
For a more authentic jerk result, add wood chips to the barbecue and cook the chicken over slow, indirect heat for 30 minutes.

Step 7:
Alternatively, heat the oven to 180C/160C fan/gas 4. Put the chicken in a roasting tin with the lime halves and roast for 45 minutes, until tender and cooked through.

Step 8:
While the chicken cooks, rinse the rice in plenty of cold water.
-
Step 9:
Put the rice in a large saucepan with all the remaining ingredients except the kidney beans. Season with salt, add 300ml cold water, and bring to a boil over high heat.
-
Step 10:
When the rice begins to boil, reduce to medium heat, cover, and cook for 10 minutes.

Step 11:
Add the kidney beans to the rice, cover, and leave off the heat for 5 minutes, until all the liquid is absorbed.

Step 12:
Squeeze the roasted lime over the chicken and serve with the rice and peas. Serve with hot sauce, if desired.
