Steps
-
Step 1:
On a large baking tray or a clean work surface, mix together the flour, baking soda, and salt.
-
Step 2:
Make a well in the middle and add the Greek yogurt.
-
Step 3:
Using your hands, slowly combine the ingredients to start forming a dough.
-
Step 4:
Knead the dough on a floured surface, adding extra flour if the texture is too sticky.
-
Step 5:
Continue kneading until the dough has a pizza-dough texture and is still very slightly sticky; this should take only a few minutes.
-
Step 6:
Add a little olive oil to a baking tray and put the dough on top.
-
Step 7:
Shape and flatten the dough into a circle about 5 cm high.
-
Step 8:
Cover the dough with a little olive oil, ensuring it is fully covered.
-
Step 9:
Bake the Kulaç as it is, or create patterns to help it cook evenly.
-
Step 10:
To make patterns, use the back of a fork to lightly press line dents all over the dough, or spike the dough with the fork.
-
Step 11:
Place the bread on the bottom shelf of a preheated oven.
-
Step 12:
Bake for 40 minutes, or until the dough is golden and firm to the touch.

Step 13:
Remove from the oven and stand the Kulaç upright or place it on a cooling rack to cool.
-
Step 14:
Cut the Kulaç into 8 slices as you would a cake. If serving warm, you may instead snap and pull apart the bread with your hands.
