Steps
-
Step 1:
Place the lamb pieces and onions in a large pan.
-
Step 2:
Add the turmeric and enough water to cover.
-
Step 3:
Bring to the boil.
-
Step 4:
Cook gently until the lamb is very tender and can easily be removed from the bones.
-
Step 5:
While the lamb cooks, cut the orange peel into thin matchstick-sized strips, removing as much pith as possible.
-
Step 6:
Leave the orange peel to soak in a bowl of water.
-
Step 7:
When the lamb is tender, remove it from the pan.
-
Step 8:
When cool enough to handle, remove the meat from the bones and shred it into strips with your hands.
-
Step 9:
Return the shredded lamb to the pan.
-
Step 10:
Wash the short-grain rice and add it to the pan with salt to taste.
-
Step 11:
Make sure the cooking juices cover the rice by about 2 cm; add more water if necessary.
-
Step 12:
Bring back to the boil, then reduce the heat to medium.
-
Step 13:
Cook uncovered, stirring from time to time, until the rice is al dente and the liquid is absorbed.
-
Step 14:
Add the natural yoghurt and stir it in well but carefully.
-
Step 15:
Fry the crushed garlic in the oil.
-
Step 16:
Add the fried garlic, dill, black pepper, chickpeas and extra salt to taste to the dish.
-
Step 17:
Mix well, then cover the top of the pan with a clean thick cloth and the lid.
-
Step 18:
Leave over low heat for about half an hour to allow the flavours to absorb.
-
Step 19:
Enjoy with warm nan bread for extra comfort.
