Steps
-
Step 1:
Remove the large piece of fat from the edge of each pork chop.
-
Step 2:
Place each pork chop between two pieces of baking parchment and bash it to about 1 cm thick using a meat tenderiser or rolling pin.
-
Step 3:
Reshape the pork with your hands to its original shape and thickness.
-
Step 4:
Put the flour, beaten eggs, and breadcrumbs into three separate wide-rimmed bowls.
-
Step 5:
Season the pork.
-
Step 6:
Dip the pork first in flour, then in egg, and finally in breadcrumbs.
-
Step 7:
Pour enough oil into a large frying or sauté pan to come 2 cm up the side of the pan.
-
Step 8:
Heat the oil to 180°C. If you do not have a thermometer, drop in a little breadcrumb; if it sinks slightly and then begins to fry, the oil is ready.
-
Step 9:
Add two pork chops and cook for 1 minute 30 seconds on each side.

Add a splash of water if the sauce is particularly thick.
-
Step 14:
Slice the tonkatsu and serve drizzled with the sauce.
