Steps

  1. Step 1:

Finely grate the zest of the orange and lemon into a medium saucepan.

  2. Step 2:

Add the whole milk, sugar, and cinnamon stick. Bring to a boil over medium heat.

  3. Step 3:

Remove the pan from the heat and add the dry sherry. Let sit until cool enough to handle.

  4. Step 4:

Meanwhile, cut the day-old baguette crosswise into 1-inch-thick slices, about 16 slices. Arrange the slices in a single layer on a rimmed baking sheet.

  5. Step 5:

Pour the milk mixture over the bread and let it soak for 5 minutes.

    5 min
  6. Step 6:

Flip each bread slice. Let stand until the bread absorbs most of the liquid but is not falling apart, about 5 minutes more.

  7. Step 7:

Heat the olive oil in a large frying pan over medium-high heat until shimmering.

  8. Step 8:

Meanwhile, whisk the eggs together in a medium bowl.

  9. Step 9:

Working with 1 slice at a time, dip the bread in the egg mixture to coat. Let the excess drip off, then add the slice to the pan.

  10. Step 10:

Repeat with as many slices as needed to fill the pan in a single layer. Fry until golden brown on the bottom, about 4 minutes.

    4 min
  11. Step 11:

Flip the slices and fry until the second side is golden brown, 3 to 4 minutes more. Transfer to a paper towel-lined plate or baking sheet.

    3–4 min
  12. Step 12:

Repeat dipping and frying the remaining bread. Drizzle with honey to serve.
