Ugali – Kenyan Cornmeal

Ingredients

For 4 servings

Steps

  1. Step 1:

Bring the water to a boil in a medium saucepan.

  2. Step 2:

    Reduce the heat to low.

  3. Step 3:

Stir constantly with a whisk while slowly adding the cornmeal to the boiling water.

  4. Step 4:

Continue cooking over low heat, stirring constantly with a sturdy wooden spoon, until the ugali pulls away from the sides of the pan, holds together, and smells like roasted corn.

  5. Step 5:

Turn the ugali out immediately onto a serving plate.

  6. Step 6:

If desired, quickly use a spoon or spatula to shape it into a thick disk or round.

  7. Step 7:

Let the ugali cool and continue to firm until it is thick enough to cut with a knife, similar to firm polenta.
