In a large bowl, combine the flour, 1 teaspoon salt, and turmeric thoroughly.

Rub the shortening into the flour until small pieces are completely coated with flour.
-

Pour in 1/2 cup of the ice water and mix with your hands to bring the dough together.
-
Step 5:
Continue adding ice water 2 to 3 tablespoons at a time until the mixture forms a dough.

Cut the dough into 2 large pieces, wrap in plastic, and refrigerate for 30 minutes; alternatively, divide it into 10 to 12 equal pieces, cover securely, and chill for 30 minutes while making the filling.

-
Step 9:

-
Step 10:
Add the onions and sauté until translucent.
-
Step 11:
Add the hot pepper, garlic, and thyme; sauté for 1 more minute, then add 1/4 teaspoon salt.
-
Step 12:
Add the seasoned ground beef, breaking up any clumps, and cook until the meat is no longer pink.
-
Step 13:
Add the ketchup and more salt to taste.
-
Step 14:
Pour in 2 cups water, stir, bring to a boil, then reduce the heat and simmer until most of the liquid has evaporated and the remainder is a thick sauce.
-
Step 15:
Fold in the green onions, remove from the heat, and cool completely.
-
Step 16:
Beat the egg and water together to make an egg wash; set aside.
-
Step 17:
To use the first shaping method, flour the work surface and rolling pin, roll one large dough piece into a very large circle, and use a wide-rimmed bowl, about 5 inches, to cut out three circles.
-
Step 18:
Place about 3 heaping tablespoons filling on one half of each circle, moisten the edges with water, fold over, and press to seal.
-
Step 19:
Crimp the edges with a fork, trim any excess, and place the patties on a parchment-lined baking sheet; continue until all the dough is rolled and filled.
-
Step 20:
To use the second shaping method, roll one pre-cut dough piece at a time on a floured surface into a 5-inch circle or slightly larger.
-
Step 21:
Place 3 heaping tablespoons filling on one side, moisten the edges with water, fold over, and press to seal.
-
Step 22:
Crimp the edges with a fork, trim any excess, and place on a parchment-lined baking sheet; continue until all the dough is rolled and filled.
-
Step 23:
Refrigerate the pans of formed patties while heating the oven to 350 F.
-
Step 24:
Brush the patties with egg wash just before placing them in the oven.
-
Step 25:
