Steps
-
Step 1:
Preheat the oven to 425°F. Wash and dry all produce.
-
Step 2:
Dice the potatoes into 1/2-inch pieces.
-
Step 3:
Trim, peel, and cut the carrots diagonally into 1/2-inch-thick pieces.
-
Step 4:
Trim and thinly slice the scallions, separating the whites from the greens; finely chop the whites.
-
Step 5:
Peel and finely chop the garlic.
-
Step 6:
In a medium bowl, soak the bread with 2 tablespoons water and break it up with your hands until pasty.
-
Step 7:
Stir the beef, sriracha, scallion whites, half the garlic, salt, and pepper into the bread mixture.
-
Step 8:
Form the mixture into two 1-inch-tall loaves and place them on one side of a baking sheet.

Step 10:
Meanwhile, place the potatoes in a medium pot with enough salted water to cover by 2 inches. Bring to a boil and cook until very tender, 12 to 15 minutes.

Step 11:
Reserve 1/2 cup potato cooking liquid, then drain the potatoes.
-
Step 12:
In a small bowl, combine the soy sauce, garlic powder, ketchup, and sugar.
-
Step 13:
Remove the meatloaves and carrots from the oven. Spoon half the ketchup glaze over the meatloaves, reserving the rest for serving.
-
Step 14:
Return the sheet to the oven and bake until the carrots are browned and tender, the meatloaves are cooked through, and the glaze is tacky, 4 to 5 minutes more.
4–5 min -
Step 15:
Melt the butter in the potato pot over medium heat. Add the remaining garlic and cook until fragrant, about 30 seconds.
-
Step 16:
Add the potatoes and wasabi. Mash, adding splashes of reserved potato cooking liquid as needed until smooth; season with salt and pepper.
-
Step 17:
Divide the meatloaves, mashed potatoes, and roasted carrots between plates. Sprinkle with scallion greens and serve with the remaining ketchup glaze for dipping.
