Steps

  1. Step 1:

    Preheat the oven to 350°F.

  2. Step 2:

Mix the graham cracker crumbs, melted butter, sugar, and ground cinnamon in a medium bowl.

  3. Step 3:

Set aside about 2 tablespoons (30 mL) of the crumb mixture, then press the remaining mixture into the bottom and up the sides of a 9-inch deep-dish pie plate.

  4. Step 4:

Bake the crust for 10 minutes, until only slightly browned.

    10 min
  5. Step 5:

Combine the milk, sugar, cornstarch, egg yolks, vanilla extract, and salt in a saucepan.

  6. Step 6:

Cook over medium heat, stirring constantly, until the mixture bubbles and thickens to a pudding-like texture.

  7. Step 7:

Set the custard aside to cool while making the meringue topping.

  8. Step 8:

Using a stand mixer with the beater attachment or an electric mixer, beat the egg whites, sugar, and cream of tartar until stiff, glossy peaks form.

  9. Step 9:

Pour the filling into the crust and cover with a thick layer of meringue, making small spikes on top.

  10. Step 10:

Sprinkle the reserved crumb mixture over the meringue and place the pie in the preheated oven.

  11. Step 11:

Bake for about 10 minutes, watching carefully, until the meringue browns.

    10 min
  12. Step 12:

Chill in the refrigerator and eat within a few hours of baking; the pie is best eaten the same day, before the meringue softens and liquefies.
